Some of our guests will come here until the end of their lives. Recently, I attended the funeral of a guest who had been in our restaurant just a week before. Expand products and attract more customers

Initially, Hiltl's main customers were artists and writers, as well as religious figures. In the 1960s, when Rove's grandmother Margrith helped run the restaurant, its customers strictly abided by religious rules and came to dine. At that time, customers mainly came for lunch, and most of them were women. Roff knew that as labor and food costs rose, Hiltl would have to serve more guests and provide a richer menu. "For 20 years, my goal has been to achieve a 50-50 balance between lunch and dinner guests. Today we have achieved that. We strive to be a restaurant where guests come to dine in all day long."

To attract more guests, they serve excellent coffee and the breakfast buffet attracts morning customers. In the afternoon, pastries and cakes, which Switzerland is very good at, are provided. Hiltl also serves alcohol.

In addition, Hiltl makes full use of its venue advantages and transforms into a nightclub after the restaurant's business hours on Friday, Saturday and Sunday nights, hiring international DJs and making the party extremely hilarious. The party usually lasts until 4 or 5 o'clock in the morning. The restaurant opens at 6 a.m. and stays open until midnight, which means Hiltl is basically open 24 hours a day three days a week.

A daily visitor flow of 2,000 people, a library of 3,000 cookbooks, and cooking classes for adults and children in English and German have all helped Hiltl establish a strong brand identity. It is not only a restaurant, it has even become a longing for locals and tourists.

Last year, they recruited two nutritionists and officially opened an academy to train professional chefs. Some of the chefs participating in the training came from top restaurants in Switzerland.

Hiltl has four branches in Zurich and will open a fifth at the main train station by the end of the year. It has also opened a branch in London under the name tibits, and will also open a branch in New York in the future.
